Wheat and corn are the two types of foods that contain the highest polyphenol when processed into snacks. This means that popcorn is corn-based snack, which is rich in antioxidants that reduce the risk of heart disease and cancer.
It was proved by a chemistry professor from the University of Scranton USA, Joe Vinson, along with his research team. According to him, polyphenols created naturally in plants and is an antioxidant with the highest levels. Polyphenols have anti-inflammatory properties that are believed to reduce the risk of chronic diseases such as heart disease and cancer.
Vinson stated that almost all types of cereals and grains, are the highest source of polyphenols. "At first, the researchers thought that fiber was the active ingredient contained in the grain, which is beneficial for reducing the risk of cancer and coronary heart disease," says Vinson.
"However, we then discovered that the polyphenols are antioxidants are higher," said Vinson.
Vinson and his team found that wheat contains higher antioxidant (per gram), compared to fruits and vegetables. Vinson found the 'popcorn' as snacks that have the highest levels of polyphenols or as much as 2.6 percent per serving.
While wheat biscuit contains just as much as 0.45 percent polyphenols per serving. However, the tortilla chips are made from corn, it contains polyphenols with the least amount.
Furthermore, Vinson said it still suggests a variety of fruits and vegetables to more consumption. "We always thought that fruits and vegetables are the main source of polyphenols,".
